Constance Ephelia, Seychelles - Review Feb 2023

We have just returned from a fabulous week at the Constance Ephelia Resort in The Seychelles.

Its fair to say we had a very nice trip!

So, I think 6 out of the 7 days there I had the Eggs Benedict for breakfast. Breakfast for us was served in a restaurant called Seselwa. We had an amazing table 50 years away from the beach and it was like eating breakfast in paradise!

Now, onto the Eggs Benedict. The restaurant had a separate egg station where the eggs were cooked by a very happy female member of staff. She always had a smile on her face and took great care in composing the dish.

The Eggs Benedict was served on a muffin toasted with oil on a flat iron grill. Once toasted, the muffin was smeared in a nice amount if spicy guacamole before being topped with bacon that had been fried on the same grill. Finished off with a fresh poached egg and a nice sized dollop of freshly made hollandaise sauce. The finishing touch was a nice pinch of hand cracked pepper before the plate was served, cooked in front of you and delivered with a smile, perfect!

Now, I normally go for hollandaise on the side so I can choose my amount but every morning they hit the mark so I ws happy. Overall these tatsted very fresh. the muffin was thin, to my liking and not too large so there was not a bread overload. The spicy guacamole was a nice addition to give it a little zing on your tastebuds and the combination of freshly made hollandaise, which again is a must for me made it a very good hotel breakfast Eggs Benedict.

I would never expect a breakfast restaurant in a resort to get near the quality of a top city hotel but I must admit that these were pretty good considering the staff were literally churning these out in quantity to people dining.
